WASHINGTON — Grilled cheese, the childhood and snow-day classic, is getting more than a little gourmet upgrade — it’s getting a location one block away from the White House.
, D.C.’s first fully dedicated grilled cheese restaurant, is scheduled to open in early March at 1730 Pennsylvania Ave., NW.
The concept is the brainchild of Bruce Klores, a D.C. attorney, and his son, Steven, reports. The two tapped New York-based cheesemonger , originally from Bethesda, Md., to curate the cheese selection.
True to form, the restaurant will be a grilled cheese hangout during the day. Come nighttime, it will transform into a bit of a classier joint with wine flights, cheese plates and cocktails.
Slesinger will offer weekly cheese classes at the 2,100-square-foot GCDC. These classes will range in topics from “cheese 101” to education on pairings and preparation.
